How To Make Vegan Air Fryer Coconut Shrimp Recipe
A crispy, flavorful vegan twist on the classic coconut shrimp recipe, made easy in an air fryer!
Serves:
Ingredients
- 1 cup of unsweetened shredded coconut
- 1 cup of Panko breadcrumbs
- 1/2 cup of flour
- 1/4 cup of cornstarch
- 1 tsp of salt
- 1/2 tsp of black pepper
- 3/4 cup of plant-based milk (such as almond or soy)
- 1 tbsp of apple cider vinegar
- 1 tbsp of hot sauce
- 1 lb of vegan shrimp (such as Gardein or Sophie’s Kitchen)
Instructions

In a bowl, mix together the shredded coconut, Panko breadcrumbs, flour, cornstarch, salt, and black pepper.

In another bowl, whisk together the plant-based milk, apple cider vinegar, and hot sauce.

Dip each vegan shrimp into the wet mixture, then into the dry mixture, pressing the coating onto the shrimp.

Place the coated shrimp into the air fryer basket, making sure they do not touch each other.

Air fry at 375°F for 8-10 minutes, until golden brown and crispy.

Serve warm with your favorite dipping sauce.
