How To Make Soy Peanut Noodle Salad

A scrumptious vegan salad with noodles, crunchy veggies, and a peanut butter soy dressing.

Serves:

Ingredients

  • 8 oz of soba noodles
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup of edamame
  • 1/4 cup of chopped scallions
  • 1/4 cup of roasted peanuts, chopped
  • for the dressing:
  • 1/4 cup of creamy peanut butter
  • 3 tbsp of soy sauce
  • 1 tbsp of rice vinegar
  • 1 tbsp of honey
  • 1 clove of garlic, minced
  • 1/4 tsp of red pepper flakes
  • 2-3 tbsp of water

Instructions

  1. Cook soba noodles according to package instructions.

  2. In a bowl, whisk together ingredients for the dressing.

  3. In a large bowl, combine cooked noodles, sliced red bell pepper, julienned carrots, edamame, and scallions.

  4. Pour the peanut butter soy dressing and toss well.

  5. Top with chopped peanuts and serve.
