These roasted carrots are coated in a sweet and savory soy maple glaze – a perfect side dish for any meal.

Ingredients

  • 1 lb carrots, peeled and sliced into 1/2 inch thick rounds
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 425°F.

  2. In a small bowl, whisk together olive oil, soy sauce, maple syrup, garlic powder, salt and pepper.

  3. Toss carrots in the sauce until fully coated.

  4. Spread the carrots out in a single layer on a baking sheet and roast for 25-30 minutes, tossing halfway through cooking time, until fork-tender and golden brown.
