  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 2 cups diced apples

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round baking pan.

  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

  3. In a separate bowl, combine the applesauce, vegetable oil, almond milk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Fold in the diced apples.

  6. Pour the batter into the prepared baking pan and spread it evenly.

  7. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool before serving.
