How To Make Vegan Yule Log

Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Serves:

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • Vegan chocolate buttercream frosting
  • Vegan chocolate ganache
  • Candied cranberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and sugar.

  3. In a separate bowl, combine the vegetable oil, almond milk, vanilla extract, and apple cider vinegar.

  4. Pour the wet ingredients into the dry ingredients and mix until well combined.

  5. Pour the batter onto the prepared baking sheet, spreading it evenly into a rectangle shape.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool for a few minutes.

  8. Carefully roll the cake up, starting from one of the shorter ends, using the parchment paper to help you.

  9. Let the rolled cake cool completely.

  10. Unroll the cake and spread a layer of vegan chocolate buttercream frosting on top.

  11. Roll the cake back up, without the parchment paper, and place it on a serving platter.

  12. Pour the vegan chocolate ganache over the cake, allowing it to drip down the sides.

  13. Decorate with candied cranberries, if desired.

  14. Slice and serve.
