How To Make Low Carb Chicken Soup Recipe

Serves:

Ingredients

  • 1 lb of boneless chicken breast
  • 3 cups of chicken broth
  • 1 cup of chopped celery
  • 1 cup of chopped carrots
  • 1 cup of chopped onion
  • 2 cloves of minced garlic
  • 1 tbsp of olive oil
  • 1 tsp of dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.

  2. Add minced garlic and cook for 1 minute.

  3. Add chicken broth, chicken breast, celery, carrots, onion, dried thyme, salt, and pepper to the pot.

  4. Bring to a boil and then reduce heat to a simmer.

  5. Simmer for 20-25 minutes, or until chicken is cooked through and vegetables are tender.

  6. Shred the chicken breast and put back into the soup.

  7. Serve hot.
