Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 carrot, peeled and chopped
- 1 zucchini, chopped
- 1 cup green beans, trimmed and cut into small pieces
- 1 can (14 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 tbsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cups baby spinach
- Parmesan cheese, grated (optional)
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, celery, and carrot and sauté for 5 minutes, or until tender.

Add the zucchini, green beans, diced tomatoes (with juice), broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes.

Stir in the cannellini beans and baby spinach and cook for an additional 5 minutes, or until the spinach has wilted.

Serve hot, topped with grated Parmesan cheese, if desired.
