Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 carrot, peeled and chopped
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and cut into small pieces
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 cups baby spinach
  • Parmesan cheese, grated (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, celery, and carrot and sauté for 5 minutes, or until tender.

  2. Add the zucchini, green beans, diced tomatoes (with juice), broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes.

  3. Stir in the cannellini beans and baby spinach and cook for an additional 5 minutes, or until the spinach has wilted.

  4. Serve hot, topped with grated Parmesan cheese, if desired.
