How To Make Low Carb Air Fryer Coconut Shrimp Recipe

Crispy shrimp coated in coconut without the carbs!

Ingredients

  • 1 lb of large shrimp, peeled and deveined
  • 1/2 cup of unsweetened shredded coconut
  • 1/2 cup of almond flour
  • 2 eggs
  • 1/2 tsp of garlic powder
  • 1/4 tsp of paprika
  • 1/4 tsp of salt
  • Cooking spray

Instructions

  1. In a small bowl, whisk eggs, garlic powder, paprika, and salt.

  2. In another bowl, mix together almond flour and shredded coconut.

  3. Dip each shrimp in the egg mixture and then coat in the coconut mixture.

  4. Preheat the air fryer to 400°F.

  5. Lightly spray the basket with cooking spray and place shrimp in a single layer.

  6. Air fry for 6-8 minutes or until shrimp is crispy and cooked through, flipping halfway through.
