How To Make Low Carb Air Fryer Eggplant Parmesan Recipe
A healthy twist on the classic eggplant parmesan, made low carb and air fried to perfection.
Serves:
Ingredients
- 2 medium eggplants, sliced into rounds
- 1 cup of almond flour
- 1 cup of grated parmesan cheese
- 2 tsp of Italian seasoning
- 1 tsp of garlic powder
- 1 tsp of onion powder
- ½ tsp of salt
- 2 eggs, beaten
- Cooking spray
- 2 cups of sugar-free marinara sauce
- 2 cups of shredded mozzarella cheese
Instructions

Preheat the air fryer to 380°F.

In a shallow bowl, mix together the almond flour, parmesan cheese, Italian seasoning, garlic powder, onion powder, and salt.

Dip each eggplant round in the beaten eggs, then coat them in the almond flour mixture.

Generously spray the air fryer basket with cooking spray and carefully arrange the eggplant rounds in a single layer.

Air fry for 10 minutes on one side, then flip and air fry for another 8-10 minutes or until golden brown and crispy.

Preheat the oven to 375°F.

In a 9×13 inch baking dish, spread a layer of marinara sauce on the bottom.

Add a layer of the air fried eggplant rounds on top, then cover with more marinara sauce and shredded mozzarella cheese.

Repeat the layering until all the eggplant rounds are used up or until the baking dish is full.

Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.

Let cool for a few minutes before serving.
