  • 1 head of cauliflower, chopped
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 1 tsp of thyme
  • Salt and pepper to taste
  • Optional toppings: chopped bacon, shredded cheese, green onions

Instructions

  1. In a slow cooker, add the cauliflower, onion, garlic, chicken broth, thyme, salt, and pepper.

  2. Cook on low for 6 hours.

  3. Use an immersion blender to blend the soup until smooth.

  4. Stir in the heavy cream and cook for an additional 10 minutes.

  5. Serve hot with optional toppings.
