  • 1 ½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tbsp ghee
  • 2 tbsp tomato paste
  • 1 cup chicken broth
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp paprika
  • ½ tsp cumin
  • 1 tsp salt
  • ½ cup heavy cream
  • Chopped cilantro, for garnish
  • Cauliflower rice, for serving

Instructions

  1. In a large skillet, melt ghee over medium heat. Add onion and cook until softened, about 5 minutes.

  2. Add garlic and ginger and cook for another minute, until fragrant.

  3. Add chicken and cook until browned on all sides, about 5 minutes.

  4. Transfer chicken and onion mixture to a slow cooker.

  5. In a small bowl, whisk together tomato paste, chicken broth, and spices. Pour over chicken.

  6. Cover and cook on low for 4 hours.

  7. Stir in heavy cream and let cook for an additional 5 minutes.

  8. Serve over cauliflower rice and garnish with cilantro.
