How To Make Keto Slow Cooker Mexican Chicken Recipe
A spicy, flavorful chicken dish cooked in a slow cooker, perfect for a low-carb, high-fat diet.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 can diced tomatoes
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 jalapeno pepper, seeded and minced
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/4 cup chicken broth
- juice of 1 lime
- cheddar cheese, shredded (optional)
- fresh cilantro, chopped (optional)
Instructions

Place the chicken breasts in the slow cooker.

Add the tomatoes, onion, green bell pepper, jalapeno pepper, garlic, chili powder, cumin, paprika, salt, and pepper to the slow cooker. Stir to mix.

Pour the chicken broth over the chicken and veggies.

Cover the slow cooker and cook on low for 4 hours.

Once the chicken is cooked, use two forks to shred it in the slow cooker.
