How To Make Keto Fish and Vegetable Skillet Recipe
A healthy and flavorful one-pan dish with fish and vegetables cooked in a delicious keto-friendly sauce.

Ingredients
- 1 pound of white fish fillets
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1/2 onion, sliced
- 1 garlic clove, minced
- 2 tbsp of olive oil
- 1/4 cup of chicken broth
- 1 tbsp of Dijon mustard
- 1 tsp of dried oregano
- Salt and pepper, to taste
Instructions

Season the fish fillets with salt and pepper.

Heat 1 tbsp of olive oil in a skillet over medium-high heat. Add the fish fillets and cook them for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.

In the same skillet, heat the remaining olive oil over medium heat. Add the sliced zucchini, bell pepper, and onion. Cook for 5-7 minutes until the vegetables are tender.

Add minced garlic, Dijon mustard, and dried oregano. Stir well.

Pour in chicken broth and simmer for 2-3 minutes until the sauce thickens.

Return the fish fillets to the skillet and spoon the sauce over them.

Cover the skillet and cook for an additional 3-4 minutes until the fish is cooked through.
