Ingredients

  • 4 (6 oz) skinless fish fillets
  • 2 cups of riced cauliflower
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon (cut into wedges)

Instructions

  1. Preheat the oven to 375°F.

  2. Brush the fish fillets with 1 tbsp of olive oil and season with garlic powder, salt, and pepper.

  3. Place the fillets on a baking sheet and bake for 12-15 minutes or until the fish is cooked through.

  4. Meanwhile, heat the remaining olive oil in a pan over medium-high heat. Add the riced cauliflower and cook for 5-7 minutes or until tender.

  5. Serve the fish with the cauliflower rice and lemon wedges on the side.
