Ingredients

  • 4 fish fillets (halibut, cod, or snapper)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup chicken broth
  • 1 tbsp butter
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 400°F.

  2. Season fish fillets with salt and pepper.

  3. Heat olive oil in a skillet over medium heat.

  4. Add fish fillets and cook for 2-3 minutes on each side until browned.

  5. Remove fish from skillet and place in an oven-safe dish.

  6. In the same skillet, add garlic and cook until fragrant.

  7. Add cherry tomatoes and cook for 1-2 minutes until they start to soften.

  8. Add basil and chicken broth and simmer for 5 minutes until the sauce thickens.

  9. Remove from heat and stir in butter.

  10. Pour the tomato basil sauce over the fish fillets.

  11. Bake in the oven for 10-12 minutes until the fish is cooked through.

  12. Serve with lemon wedges.
