Ingredients

  • 1 lb white fish fillet, cut into chunks
  • 1 tbsp coconut oil
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1/4 tsp turmeric
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1 can (14 oz) coconut milk
  • 1/4 cup cilantro, chopped
  • juice of 1 lime

Instructions

  1. In a large skillet over medium-high heat, melt the coconut oil and sauté the onion until translucent.

  2. Add the garlic and ginger and cook for 1-2 minutes until fragrant.

  3. Add the curry powder, turmeric, cumin, paprika, and salt and stir to coat the onions.

  4. Pour in the can of coconut milk and bring the mixture to a simmer.

  5. Add the fish to the skillet and cook for 10-12 minutes until the fish is cooked through.

  6. Stir in the cilantro and lime juice and serve hot.
