Ingredients

  • 2 large chicken breasts, cut in half
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 2 eggs, beaten
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 425°F.

  2. In a bowl, mix almond flour, parmesan cheese, garlic powder, dried basil, and salt.

  3. Dip each chicken breast in beaten eggs, then coat in the almond flour mixture.

  4. Heat the olive oil in a large skillet over medium-high heat. Fry the chicken breasts for 3-4 minutes on each side, until golden brown.

  5. Transfer the chicken to a baking dish and pour marinara sauce on top of each one.

  6. Sprinkle shredded mozzarella cheese on top of the marinara sauce.

  7. Bake for 10-15 minutes, or until the cheese is melted and bubbly.

  8. Serve hot with a fresh side salad.
