  • 4 medium zucchinis, halved lengthwise
  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1/4 cup onion, chopped
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh basil leaves, chopped
  • Salt and pepper to taste
  • Olive oil for brushing
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat oven to 375°F.

  2. Scoop out the seeds and flesh of the zucchinis to create a boat.

  3. In a skillet over medium-high heat, cook the ground chicken until browned. Add the garlic, onion,

  4. salt, and pepper, and cook until onion is softened.

  5. Distribute the chicken mixture into the zucchini boats, then top with shredded mozzarella cheese.

  6. Place the zucchini boats onto a greased baking sheet and brush them with olive oil.

  7. Bake for 25 minutes or until the cheese has melted and the zucchinis are tender.

  8. Sprinkle with chopped basil and grated parmesan cheese before serving.
