Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lemon, juiced and zested
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. In a small bowl, whisk together lemon juice, lemon zest, garlic, olive oil, salt, and pepper.

  2. Place chicken breasts in a large resealable bag, and pour marinade over chicken. Seal bag and let marinate for at least 10 minutes (or up to overnight).

  3. Preheat oven to 375°F.

  4. Place chicken breasts in a greased baking dish and pour leftover marinade over chicken.

  5. Bake for 18-20 minutes or until chicken is cooked through (internal temperature of 165°F).

  6. Garnish with fresh parsley, if desired, and serve.
