How To Make Garlic Chicken with Herbed Potatoes

Ingredients
- 4 chicken breasts
- 4 cloves of garlic, minced
- 1/4 cup olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large potatoes, peeled and diced
- 2 tbsp butter
- 1 tbsp fresh parsley, chopped
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, mix together minced garlic, olive oil, dried thyme, dried rosemary, dried oregano, salt, and black pepper.

Rub the garlic mixture all over the chicken breasts, ensuring they are completely coated.

Place the chicken breasts on a baking sheet and bake for 30-35 minutes, or until cooked through.

While the chicken is cooking, boil the diced potatoes in salted water until fork tender. Drain the potatoes.

In a large skillet, melt the butter over medium heat. Add the boiled potatoes and sauté until golden brown and crispy.

Sprinkle fresh parsley over the potatoes and toss to combine.
