How To Make Citrus-Spiked Chicken with Roasted Red Onions

Ingredients

  • 4 chicken breasts
  • 2 red onions, thinly sliced
  • 2 oranges
  • 2 lemons
  • 4 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Zest 1 orange and 1 lemon. In a small bowl, combine the zest with 2 tablespoons of olive oil, smoked paprika, salt, and black pepper.

  3. Rub the citrus spice mixture all over the chicken breasts and set aside to marinate for 10 minutes.

  4. In a large baking dish, arrange the thinly sliced red onions in an even layer.

  5. Cut the zested orange and lemon in half and squeeze the juice over the red onions.

  6. Drizzle the remaining 2 tablespoons of olive oil over the onions and season with additional salt and pepper, if desired.

  7. Place the marinated chicken breasts on top of the onions.

  8. Roast in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the onions are caramelized.

  9. Remove from the oven and let the chicken rest for a few minutes before serving.

  10. Garnish with fresh parsley and serve hot.
