How To Make Cast Iron Roast Chicken and Potatoes

Ingredients
- 1 whole chicken, about 4 pounds
- 4 potatoes, peeled and cut into chunks
- 4 cloves of garlic
- 2 tablespoons of olive oil
- 1 tablespoon of dried rosemary
- 1 tablespoon of dried thyme
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

Rub the chicken with olive oil, dried rosemary, dried thyme, salt, and pepper.

Place the chicken in a cast iron skillet and arrange the potatoes and garlic cloves around it.

Roast in the preheated oven for about 1 hour, or until the chicken is cooked through and the potatoes are crispy and golden.

Remove from the oven and let it rest for a few minutes before serving. Slice the chicken and serve it with the roasted potatoes and garlic cloves.
