How To Make Cast Iron Roast Chicken and Potatoes

Ingredients

  • 1 whole chicken, about 4 pounds
  • 4 potatoes, peeled and cut into chunks
  • 4 cloves of garlic
  • 2 tablespoons of olive oil
  • 1 tablespoon of dried rosemary
  • 1 tablespoon of dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Rub the chicken with olive oil, dried rosemary, dried thyme, salt, and pepper.

  3. Place the chicken in a cast iron skillet and arrange the potatoes and garlic cloves around it.

  4. Roast in the preheated oven for about 1 hour, or until the chicken is cooked through and the potatoes are crispy and golden.

  5. Remove from the oven and let it rest for a few minutes before serving. Slice the chicken and serve it with the roasted potatoes and garlic cloves.
