How To Make Mackerel Stuffed Peppers Recipe

Ingredients

  • 4 large bell peppers (any color)
  • 2 cans of mackerel in water, drained
  • 1/2 cup of cooked quinoa
  • 1/4 cup of chopped onion
  • 1/4 cup of chopped celery
  • 1/4 cup of chopped bell pepper
  • 1/4 cup of chopped parsley
  • 2 cloves of garlic, minced
  • 1 tsp of smoked paprika
  • 1/2 tsp of cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. Cut off the tops of the bell peppers and remove the seeds and membranes.

  3. In a mixing bowl, combine the mackerel, quinoa, onion, celery, bell pepper, parsley, garlic, smoked paprika, cumin, salt, and pepper, and mix well.

  4. Stuff the bell peppers with the mackerel mixture and place them in a baking dish.

  5. Bake in the preheated oven for 30 minutes or until the peppers are tender and slightly browned on top.

  6. Serve and enjoy!
