  • 4 tilapia fillets
  • 1 cup almond meal
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 eggs, beaten
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a shallow dish, combine almond meal, Parmesan cheese, garlic powder, paprika, salt, and black pepper.

  3. Dip each tilapia fillet into the beaten eggs, then coat it with the almond mixture, pressing gently to adhere.

  4. Heat olive oil in a large skillet over medium heat. Cook the coated tilapia fillets for 2-3 minutes on each side until golden brown.

  5. Transfer the partially cooked fillets to the prepared baking sheet and bake for an additional 8-10 minutes until the fish is cooked through and flakes easily with a fork.

  6. Serve the almond-crusted tilapia hot with your favorite side dish.
