Ingredients

  • 4 cups dandelion flowers
  • 4 cups boiling water
  • 1 lemon, zested and juiced
  • 2 oranges, zested and juiced
  • 2 cups granulated sugar
  • 1/4 teaspoon active dry yeast

Instructions

  1. In a large bowl, pour the boiling water over the dandelion flowers. Let it steep for 24 hours.

  2. Strain the liquid through a fine-mesh sieve, discarding the flowers.

  3. In a saucepan, combine the dandelion liquid, lemon zest, orange zest, lemon juice, orange juice, and sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool to room temperature.

  4. Once cooled, sprinkle the yeast evenly over the liquid. Cover the container with a clean cloth and let it ferment for 7-10 days in a cool, dark place.

  5. After fermentation, strain the liquid again to remove any sediment. Bottle the dandelion wine and seal tightly.

  6. Let the wine age for at least 3 months in a cool, dark place before serving.
