Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp instant coffee powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp butter, melted

Instructions

  1. In a large bowl, whisk together flour, sugar, instant coffee powder, baking powder, baking soda, and salt.

  2. In another bowl, whisk together egg, milk, and vanilla extract.

  3. Add melted butter to the wet ingredients and mix well.

  4. Add the wet ingredients to the dry ingredients and mix until just combined.

  5. Heat a non-stick pan over medium heat and lightly grease with butter or oil.

  6. Pour 1/4 cup batter into the pan for each pancake.

  7. Cook until the pancakes are golden brown on each side, about 2-3 minutes.

  8. Serve warm with desired toppings.
