How To Make Parkin

Ingredients

  • 200g self-raising flour
  • 100g medium oatmeal
  • 3 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp baking powder
  • 150g golden syrup
  • 100g black treacle
  • 125g unsalted butter
  • 125g dark brown sugar
  • 1 medium egg

Instructions

  1. Preheat the oven to 160°C (325°F). Grease and line an 8-inch square baking tin.

  2. In a large bowl, combine the flour, oatmeal, ginger, cinnamon, nutmeg, and baking powder.

  3. In a saucepan, melt the golden syrup, treacle, butter, and sugar over low heat. Stir until smooth.

  4. Pour the syrup mixture into the dry ingredients. Add the egg and mix well until all the ingredients are combined.

  5. Pour the batter into the prepared tin and smooth the top with a spatula.

  6. Bake in the preheated oven for 50 minutes, or until the top is firm and a skewer inserted into the center comes out clean.

  7. Allow the Parkin to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

  8. Once cooled, cut into squares and serve.
