Ingredients

  • 1 whole turkey (around 4 pounds)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons mixed fresh herbs (such as rosemary, thyme, and sage), chopped
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cut into chunks
  • 3 tablespoons vegetable oil
  • 1 cup cranberry sauce
  • 1 cup chicken or turkey broth
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a small bowl, mix together the softened butter, chopped herbs, salt, and pepper.

  3. Carefully loosen the skin of the turkey by sliding your hand between the skin and the breast meat.

  4. Rub half of the herb butter mixture under the skin and the remaining mixture over the outside of the turkey.

  5. Place the turkey in a roasting pan and roast in the preheated oven for about 2 hours, or until the internal temperature reaches 165°F (75°C).

  6. In the meantime, parboil the potato chunks in a pot of salted water for about 5 minutes, then drain.

  7. Heat the vegetable oil in a large frying pan and add the parboiled potatoes. Fry until golden and crispy.

  8. While the turkey is roasting and the potatoes are frying, prepare the cranberry sauce gravy. In a saucepan, heat the cranberry sauce and broth together until simmering.

  9. In a small bowl, whisk together the flour with some water to make a slurry. Slowly add the slurry to the simmering cranberry sauce mixture, whisking constantly until the sauce thickens.

  10. Season with salt and pepper to taste.

  11. Once the turkey is cooked, remove it from the oven and let it rest for about 15-20 minutes before carving.

  12. Serve the herb-buttered turkey with the crispy roast potatoes and cranberry sauce gravy.
