Ingredients

  • 1 lb rare beef
  • 2 cups all-purpose flour
  • 4 eggs
  • 1 cup milk
  • 1/4 cup Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil

Instructions

  1. Preheat the oven to 450°F (230°C) and place a cast iron skillet in the oven to heat.

  2. In a large bowl, whisk together the flour, eggs, milk, Dijon mustard, salt, and black pepper until smooth.

  3. Carefully remove the hot skillet from the oven and add the vegetable oil. Swirl the oil to coat the skillet evenly.

  4. Pour the batter into the hot skillet, then place it back in the oven. Bake for 25-30 minutes, until the Yorkshire pudding is golden and puffy.

  5. While the Yorkshire pudding bakes, heat a grill or skillet over high heat. Season the rare beef with salt and pepper, then grill or sear for 2-3 minutes per side for a rare or medium-rare doneness.

  6. Remove the beef from the heat and let it rest for 5 minutes before slicing.

  7. Serve the sliced rare beef with the mustard Yorkshire puddings.
