Ingredients

  • 100g all-purpose flour
  • 2 large eggs
  • 150ml milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1 apple, thinly sliced
  • 100g blackberries
  • 2 tbsp butter, melted
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 220°C (425°F) and place a 12-hole Yorkshire pudding tin in the oven to heat.

  2. In a mixing bowl, whisk together the flour, eggs, milk, sugar, and vanilla extract until smooth.

  3. Carefully remove the hot tin from the oven and quickly divide the melted butter between each hole.

  4. Add a few slices of apple and a couple of blackberries into each hole.

  5. Pour the batter over the fruit, filling each hole about ¾ full.

  6. Place the tin back in the oven and bake for 20-25 minutes or until the puddings are puffed up and golden brown.

  7. Dust with powdered sugar and serve immediately.
