How To Make Gooseberry, Elderflower & Sauvignon Sorbet

Ingredients

  • 400g gooseberries
  • 200ml elderflower cordial
  • 200ml Sauvignon Blanc wine
  • 150g sugar
  • Juice of 1 lemon

Instructions

  1. In a saucepan, combine the gooseberries, elderflower cordial, Sauvignon Blanc, sugar, and lemon juice.

  2. Bring to a simmer over medium heat and cook for 10-15 minutes, until the gooseberries are soft.

  3. Remove from heat and let the mixture cool completely.

  4. Transfer the mixture to a blender and blend until smooth.

  5. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

  6. Once churned, transfer the sorbet to a lidded container and freeze for at least 4 hours, or until firm.

  7. Serve the Gooseberry, Elderflower & Sauvignon Sorbet in chilled dessert bowls or cones.
