How To Make Gooseberry & Elderflower Yogurt Ice

Ingredients
- 2 cups of gooseberries, stemmed and washed
- 1/2 cup elderflower cordial
- 2 cups Greek yogurt
- 1/4 cup honey
- 1 tsp vanilla extract
Instructions

In a blender, puree the gooseberries and elderflower cordial until smooth.

In a large bowl, combine the puree, Greek yogurt, honey, and vanilla extract. Mix well to combine.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until thick and creamy.

Transfer the yogurt ice into a freezer-safe container and freeze for at least 4 hours or until firm.

Serve the Gooseberry & Elderflower Yogurt Ice chilled, garnished with fresh gooseberries if desired.
