Ingredients

  • 500g gooseberries
  • 100ml elderflower cordial
  • 300ml custard
  • 200g sponge cake, cut into cubes
  • 200ml whipped cream
  • Fresh mint leaves, for garnish

Instructions

  1. In a saucepan, cook the gooseberries with elderflower cordial over medium heat until softened. Allow to cool.

  2. Take four serving glasses and layer them with sponge cake cubes.

  3. Spoon a layer of custard over the sponge cake, followed by a layer of cooked gooseberries.

  4. Repeat the layers until the glasses are filled, ending with a layer of custard.

  5. Top with whipped cream and garnish with fresh mint leaves.

  6. Chill in the refrigerator for at least 2 hours before serving.
