How To Make Gooseberry & Elderflower Trifle

- 500g gooseberries
- 100ml elderflower cordial
- 300ml custard
- 200g sponge cake, cut into cubes
- 200ml whipped cream
- Fresh mint leaves, for garnish
Instructions

In a saucepan, cook the gooseberries with elderflower cordial over medium heat until softened. Allow to cool.

Take four serving glasses and layer them with sponge cake cubes.

Spoon a layer of custard over the sponge cake, followed by a layer of cooked gooseberries.

Repeat the layers until the glasses are filled, ending with a layer of custard.

Top with whipped cream and garnish with fresh mint leaves.

Chill in the refrigerator for at least 2 hours before serving.
