A decadent chocolate mousse cake with layers of rich chocolate, creamy mousse and fluffy cake.

Serves:

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup strong brewed coffee, cooled
  • 1 cup heavy cream
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda and salt.

  3. Add oil, eggs and coffee; whisk until smooth.

  4. Pour batter into a greased 9-inch cake pan.

  5. Bake for 30-35 minutes or until a toothpick inserted in center of cake comes out clean.

  6. Let cake cool completely.

  7. In a large bowl, whip heavy cream until stiff peaks form.

  8. Fold in chocolate chips until fully combined.

  9. Slice cake horizontally into two even layers.

  10. Spread chocolate mousse on top of one layer.

  11. Place second layer on top of mousse.

  12. Spread remaining mousse over top of cake.

  13. Chill for at least 1 hour before serving.
