Serves:
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon active dry yeast
- 1/2 teaspoon salt
- 1 1/2 cups warm milk
- 1 tablespoon sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoons melted butter
- Butter or oil for cooking
- For the burnt honey butter:
- 1/2 cup unsalted butter, softened
- 2 tablespoons honey, slightly burnt or caramelized
Instructions
-
In a large bowl, whisk together the flour, baking powder, yeast, and salt.
-
In a separate bowl, combine the warm milk, sugar, and vanilla extract. Stir until the sugar dissolves.
-
Make a well in the center of the dry ingredients and pour in the milk mixture. Stir until a sticky batter forms.
-
Cover the bowl with a clean kitchen towel and let the batter rest in a warm place for about 1 hour, or until it becomes bubbly and doubles in size.
-
Stir in the melted butter until well incorporated.
-
Preheat a non-stick pan or griddle over medium-low heat and lightly grease it with butter or oil.
-
Using a greased metal ring or a round cookie cutter, pour about 1/4 cup of batter into the ring/cutter on the hot pan. Cook for about 5 minutes, until bubbles form on the surface and the edges start to set.
-
Remove the ring/cutter and flip the crumpet over using a spatula. Cook for an additional 2-3 minutes until golden brown.
-
Transfer the cooked crumpets to a wire rack to cool. Repeat with the remaining batter until all the crumpets are cooked.
-
For the burnt honey butter, simply mix the softened butter with the slightly burnt or caramelized honey until well combined.
-
Serve the homemade crumpets warm with a generous slathering of burnt honey butter.
