Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon active dry yeast
  • 1/2 teaspoon salt
  • 1 1/2 cups warm milk
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Butter or oil for cooking
  • For the burnt honey butter:
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons honey, slightly burnt or caramelized

Instructions

  1. In a large bowl, whisk together the flour, baking powder, yeast, and salt.

  2. In a separate bowl, combine the warm milk, sugar, and vanilla extract. Stir until the sugar dissolves.

  3. Make a well in the center of the dry ingredients and pour in the milk mixture. Stir until a sticky batter forms.

  4. Cover the bowl with a clean kitchen towel and let the batter rest in a warm place for about 1 hour, or until it becomes bubbly and doubles in size.

  5. Stir in the melted butter until well incorporated.

  6. Preheat a non-stick pan or griddle over medium-low heat and lightly grease it with butter or oil.

  7. Using a greased metal ring or a round cookie cutter, pour about 1/4 cup of batter into the ring/cutter on the hot pan. Cook for about 5 minutes, until bubbles form on the surface and the edges start to set.

  8. Remove the ring/cutter and flip the crumpet over using a spatula. Cook for an additional 2-3 minutes until golden brown.

  9. Transfer the cooked crumpets to a wire rack to cool. Repeat with the remaining batter until all the crumpets are cooked.

  10. For the burnt honey butter, simply mix the softened butter with the slightly burnt or caramelized honey until well combined.

  11. Serve the homemade crumpets warm with a generous slathering of burnt honey butter.
