  • 1/2 cup salsify, grated
  • 1 cup milk
  • 1 tbsp butter, melted
  • 2 eggs

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.

  2. In a separate bowl, combine the grated salsify, milk, melted butter, and eggs.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  4. Heat a non-stick frying pan or griddle over medium heat.

  5. Spoon 1/4 cup of the batter onto the pan for each crumpet. Cook for 2-3 minutes, until bubbles start to form on the surface.

  6. Flip the crumpets and cook for an additional 2-3 minutes, until golden brown.

  7. Remove from the pan and repeat with the remaining batter.
