Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup salsify, grated
- 1 cup milk
- 1 tbsp butter, melted
- 2 eggs
Instructions

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, combine the grated salsify, milk, melted butter, and eggs.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Heat a non-stick frying pan or griddle over medium heat.

Spoon 1/4 cup of the batter onto the pan for each crumpet. Cook for 2-3 minutes, until bubbles start to form on the surface.

Flip the crumpets and cook for an additional 2-3 minutes, until golden brown.
