Ingredients

  • 4 crumpets
  • 4 eggs
  • 1 cup shredded cheese
  • Salt and pepper, to taste
  • Butter, for frying

Instructions

  1. Preheat a non-stick frying pan over medium heat.

  2. In a bowl, crack the eggs and whisk until well beaten. Season with salt and pepper.

  3. Spread butter on one side of each crumpet and place them butter-side down in the pan.

  4. Pour the beaten eggs evenly over the top of each crumpet.

  5. Sprinkle shredded cheese on top of each crumpet.

  6. Cook for about 5 minutes or until the bottom of the crumpets are golden brown and the eggs are set.

  7. Using a spatula, carefully flip the crumpets over and cook for an additional 2-3 minutes or until the cheese is melted and bubbly.

  8. Remove from the pan and serve hot.
