How To Make Chocolate Crumpets

Ingredients
- 1 cup all-purpose flour
- ¼ cup cocoa powder
- 2 tbsp granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup buttermilk
- 2 tbsp melted butter
- 1 large egg
- 1 tsp vanilla extract
- ½ cup chocolate chips
Instructions

In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and whisk until just combined. Fold in the chocolate chips.

Heat a non-stick griddle or skillet over medium-low heat. Lightly grease with cooking spray or butter.

Pour ¼ cup of the batter onto the griddle for each crumpet. Cook for 2-3 minutes, until bubbles form on the surface. Flip and cook for an additional 1-2 minutes, until cooked through.
