Preparation: 15 minutes
Cooking: 6 hours
Total: 6 hours 15 minutes

  • 3 lbs beef brisket, trimmed
  • 1/2 cup brown sugar
  • 1/4 cup smoked paprika
  • 2 tbsp kosher salt
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 4 tbsp unsalted butter

  1. Preheat smoker to 225°F.

  2. In a small bowl, combine brown sugar, smoked paprika, kosher salt, chili powder, garlic powder, onion powder, and cayenne pepper. Mix well.

  3. Rub spice mixture onto the brisket, making sure to coat all sides.

  4. Place the brisket in the smoker and smoke for 5-6 hours, until internal temperature reaches 200°F.

  5. In a saucepan, combine BBQ sauce, honey, apple cider vinegar, water, and unsalted butter. Bring to a boil and simmer for 10 minutes.

  6. Once the brisket is done smoking, remove from smoker and let rest for 10 minutes.

  7. Cut brisket into bite-sized pieces and place in a large mixing bowl.

  8. Pour the BBQ sauce over the brisket and toss to coat.

  9. Place brisket back in the smoker for an additional 30 minutes to allow the sauce to caramelize and create the burnt ends.

  10. Serve hot with your favorite sides.
