How To Make Easy Jam Pockets
Bake up a batch of these little jam pockets for your next bake sale! Each bite of these homemade pockets comes with a fruity burst for a sweeter treat.
Serves:
Ingredients
- 2cupsflour
- ½cuppowdered sugar
- ½tspsalt
- 1cupbutter,(2 sticks), cold, cut into cubes
- 1egg
- 1tspvanilla
- jam,any flavor
Instructions

Preheat the oven to 375 degrees F.

In a food processor, combine the flour, sugar, and salt until mixed.

Toss in the cubed butter, then give it a few long pulses, until it resembles coarse cornmeal.

Toss in the egg and vanilla, then pulse a couple more times, until a very soft dough forms.

Cover with plastic wrap, then refrigerate for a couple of hours.

Roll the dough out to ⅛-inch thick, then use a cookie cutter or a drinking glass to cut into circles.

Add a dollop of jam or about 1 heaping teaspoon to the middle of each circle, then gently fold the edges inward, overlapping in the middle.

Bake for 10 minutes. The bottoms should be just faintly brown, and the tops will not be.

Allow to cool, then sprinkle with powdered sugar on top, if desired.
