How To Make Fig and Mascarpone Stuffed French Toast
Thick slices of bread stuffed with creamy mascarpone cheese and sweet fig jam, topped with fresh fruit and powdered sugar.

Ingredients
- 8 slices of thick-cut bread
- 4 oz mascarpone cheese
- 4 tbsp fig jam
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 tbsp butter
- Fresh fruit and powdered sugar for topping
Instructions

In a small bowl, mix together the mascarpone cheese and fig jam.

Cut a slit in the top of each slice of bread, creating a pocket for the filling.

Spoon the mascarpone-fig mixture into the pockets, dividing it evenly.

In a separate bowl, whisk together the eggs, milk, and vanilla extract.

Heat a large skillet over medium heat and add the butter.

Dip each stuffed slice of bread into the egg mixture, turning to coat both sides.

Place the bread slices in the skillet and cook for 3-4 minutes per side, until golden brown and cooked through.
