How To Make Blueberry Crumb Bars

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions

Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.

In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a small bowl, whisk together the egg and vanilla extract. Add the egg mixture to the flour mixture and mix until a dough forms.

Press two-thirds of the dough into the bottom of the prepared baking dish to form the crust.

In another bowl, gently toss the blueberries, granulated sugar, cornstarch, and lemon juice until well combined.

Spread the blueberry mixture evenly over the crust.

Crumble the remaining dough over the blueberry layer.

Bake for 40-45 minutes or until the edges are golden brown and the blueberry filling is bubbling.
