How To Make Pineapple Bliss Cupcakes

These pineapple bliss cupcakes are low-fat treats that are easy to make. The moist cupcakes are topped with a pineapple-infused cream cheese frosting.

Ingredients

  • 18¼ozyellow cake mix
  • 20ozpineapple in juice,crushed, do not drain

For Pineapple Fluff Cream Cheese Frosting:

  • 8ozPhiladelphia cream cheese,(⅓ less fat)
  • 20ozpineapple in pineapple juice,drained and squeezed well
  • ¾cupfluff marshmallow spread

Instructions

  1. Combine both ingredients in large bowl.

  2. Mix on medium speed with electric mixer.

  3. Pour into lined cupcake tins until about ⅔ full.

  4. Bake in accordance with cake mix directions or until a toothpick inserted comes out clean.

  5. Set aside to cool.

  6. Combine cream cheese, crushed pineapple and marshmallow fluff in a medium bowl and mix with a hand mixer until combined well.

  7. Spread on cooled cupcakes and refrigerate until ready to eat.
