  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 lemongrass stalks, bruised
  • 2 kaffir lime leaves
  • 2 chicken breasts, thinly sliced
  • 2 cups chicken broth
  • 1 can coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • 1 red chili, thinly sliced
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until softened.

  2. Add the lemongrass stalks and kaffir lime leaves to the pot, and cook for 2 minutes to release their flavors.

  3. Add the chicken slices to the pot and cook until they are no longer pink.

  4. Pour in the chicken broth and coconut milk. Stir in the fish sauce, soy sauce, and brown sugar. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.

  5. Stir in the lime juice and sliced red chili. Taste and adjust the seasoning if necessary.

  6. Remove the lemongrass stalks and kaffir lime leaves from the soup.

  7. Serve the Thai Coconut Soup hot, garnished with fresh cilantro.
