How To Make Saffron, Pistachio & White Chocolate Cookies

Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon saffron threads, crushed
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup pistachios, chopped
- 1/2 cup white chocolate chips
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg, vanilla extract, and crushed saffron threads.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix until well combined.

Fold in the chopped pistachios and white chocolate chips.

Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
