How To Make Mexican Sugar Cookies

Ingredients

  • 1 cup of butter, softened
  • 1 cup of granulated sugar
  • 1 tsp of vanilla extract
  • 2 eggs
  • 3 cups of all-purpose flour
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • 1/4 cup of cinnamon sugar (for rolling)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, cream together the butter and sugar until smooth and creamy.

  3. Add the vanilla extract and eggs, one at a time, mixing well after each addition.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the butter mixture, mixing until well combined.

  6. Roll the dough into small balls and then roll them in the cinnamon sugar mixture.

  7. Place the coated dough balls onto a baking sheet, spacing them about 2 inches apart.

  8. Use the bottom of a glass to gently flatten each cookie.

  9. Bake for 10-12 minutes or until the edges are golden brown.

  10. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
