How To Make Mexican Wedding Cookies

Ingredients
- 1 cup unsalted butter, at room temperature
- 1/2 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped pecans or walnuts
- Additional powdered sugar for dusting
Instructions

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy.

Stir in the vanilla extract.

In a separate bowl, combine the flour and salt. Gradually add the flour mixture to the butter mixture, mixing until well combined.

Fold in the chopped nuts.

Roll the dough into 1-inch balls and place them on the prepared baking sheet.

Bake for 10-12 minutes, or until the bottoms are lightly golden.

Allow the cookies to cool for a few minutes, then roll them in powdered sugar while still warm.

Transfer the cookies to a wire rack to cool completely.

Once cooled, roll the cookies in powdered sugar again for an extra coating.
