How To Make Simple Lemon Bars

Treat your taste buds to a zesty and sweet bite in this lemon bars recipe. Crisp shortbread crust are layered with a moist lemon filling for a tangy treat!

For Shortbread Crust:

  • ¾cupbutter,softened
  • cupconfectioner’s sugar,plus more for sprinkling
  • cupsall purpose flour

For Lemon Filling:

  • 4large eggs
  • 1⅓cupsgranulated sugar
  • 3tbspall purpose flour
  • 2tsplemon zest,(from about 2 large lemons), grated
  • 2⅔cuplemon juice,(from 3 to 4 large lemons), freshly squeezed
  • cupmilk


  1. Preheat oven to 350 degrees. Grease a 9×13-pan and set aside.

Shortbread Crust:

  1. In a large mixing bowl, use a hand mixer to beat butter and confectioners’ sugar until blended. Slowly beat in 1½ cups of flour.

  2. Press into the bottom of the greased pan and bake for 18 to 20 minutes until golden brown.

Lemon Filling:

  1. While baking, in a small bowl whisk eggs, sugar, zest, lemon juice, milk and flour until frothy. Pour over the hot crust.

  2. Turn oven to 325 degrees F and bake an additional 18 to 20 minutes until the top is lightly brown.

  3. Cool completely on a wire rack. Dust the top with additional confectioners’ sugar. Cut into bars.

  4. Serve and enjoy.
