Made with shredded coconut and chopped walnuts, these date balls make chewy and chunky baked treats in under an hour for quick holiday desserts.

Ingredients

  • 1cupdates,pitted, chopped
  • 1tspwater
  • 1cupwalnuts,chopped
  • 2egg white
  • 1cupbrown sugar,packed
  • 1tbspbutter
  • 1cupcoconut,shredded

Instructions

  1. Preheat the oven to 350 degrees F. Grease the cookie sheets.

  2. In a small saucepan over low heat, combine the butter, water, and dates. Bring to a boil, then remove from heat, and let stand for 10 minutes.

  3. Pour the date mixture into a medium bowl. Mix in the brown sugar and chopped nuts.

  4. Whip egg whites in a small bowl until stiff. Fold the egg whites into the date mixture.

  5. Roll the dough into 2-inch balls and roll in shredded coconut. Place on cookie sheets about 2-inches apart.

  6. Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

  7. Serve and enjoy.
