  • 4 mini baguettes
  • 1/2 cup mayonnaise
  • 1/4 cup pickled carrots and daikon
  • 1/4 cup cucumber slices
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup sliced jalapenos
  • 8 slices of grilled pork or chicken
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp sugar

Instructions

  1. Preheat the grill or a grill pan over medium-high heat.

  2. In a small bowl, mix soy sauce, fish sauce, and sugar. Marinate the grilled pork or chicken in this mixture for 10 minutes.

  3. Grill the marinated pork or chicken until cooked through, about 4-5 minutes per side. Let it rest for a few minutes, then slice it into thin pieces.

  4. Slice the mini baguettes in half lengthwise. Toast them lightly on the grill or in a toaster.

  5. Spread mayonnaise on one side of each baguette.

  6. Layer the pickled carrots and daikon, cucumber slices, fresh cilantro leaves, sliced jalapenos, and grilled pork or chicken on the other side of the baguette.

  7. Press the sandwich together gently and serve.
